I wish I something other than the rain to blog about, but when you spend the day coped up inside a 23′ RV there really isn’t too much excitement.
During the minutes when the rain let up, we were able to walk the dogs and grill up some dinner. We made Mahi Mahi Skewers, with pineapple and bell peppers. Put it all in a tortilla and add a little Tomatillo Salsa and you have a delicious taco. So much so that I am planning on making it again with the leftover pineapple. I hope to find a local fish monger and get some more Mahi, maybe they will have hogfish and I can try it with that.
