I thought I would give an update of the festivites so far. This holiday we are following Alton Brown’s scientific approach to butt-smoking. Last night we put the butt in a cooler full of brine, consisting of pickling salt, molasses, and bottled water. This morning I rubbed the butt with a dry rub, while husband started the holiday conflagaration. The butt went into the smoker at 8:30AM.
I have set up the webcam on this site. Tonight we will point it towards our sound and light show. That’s all for now.
